Black Bean Chili with Beef


INGREDIENTS
  1. 1/2 pound lean ground beef
  2. 1 large onion, diced
  3. 2 (15-ounce) cans black beans
  4. 1 (28-ounce) can tomato puree
  5. 1 (15-ounce) can corn, drained
  6. 1 tablespoon chili powder
  7. 1 teaspoon ground cumin
  8. 1/2 teaspoon ground black pepper
DIRECTIONS
  1. Preheat a deep skillet over medium-high heat. Brown beef until no longer pink, about 5 minutes. Drain.
  2. Add onion and sauté until soft, about 5 minutes.
  3. Add beans (undrained), tomato purée, corn, chili powder, cumin and pepper.
  4. Bring to a boil, cover and lower heat; simmer gently for 10 minutes until thoroughly heated.
