Amy's Kitchen Texas Chili


INGREDIENTS
  1. 2 lb. stew beef
  2. 1 cup onion (chopped)
  3. 1 bell pepper (chopped)
  4. 1/2 cup celery (chopped)
  5. 1 can kidney beans
  6. 2 cans pinto beans
  7. 1 can whole kernel corn (drained)
  8. 2 cans Hunt's diced tomatoes
  9. garlic to taste
  10. 12 oz. tomato paste
  11. 2 1/2 cups water
  12. 2 jalapeno peppers (diced small)
  13. 1 1/2 tsp. chili powder
  14. 1/2 tsp. red pepper flakes
  15. 1/2 tsp. oregano
  16. 1/2 tsp. cumin
DIRECTIONS
  1. Cook beef with all ingredients except corn and beans in crockpot 6 hours or so on low to medium low.
  2. About an hour before serving, add beans and corn.
  3. Turn up to medium or medium high and cook about 1 hour.
  4. This is great with Mexican cornbread.
