All-Bean Chili


INGREDIENTS
  1. 1 onion, chopped
  2. 1 green bell pepper, diced
  3. 2 cloves garlic
  4. 1 tablespoon olive oil
  5. 1/2 teaspoon ground cumin
  6. 1 tablespoon chili powder
  7. 1/2 teaspoon dried oregano
  8. 2 cups canned pinto or kidney beans
  9. 1/2 cup water
  10. 1/4 teaspoon salt
  11. Fresh cilantro, chopped
DIRECTIONS
  1. In a nonstick skillet, sauté onion, green pepper and garlic in olive oil over medium heat until soft, about 5 minutes.
  2. Add cumin, chili powder and oregano; cook 1 minute.
  3. Add beans, water and salt, and cook another 15 minutes.
