2 Alarm Chili


INGREDIENTS
  1. 2 pounds ground beef
  2. 1/2 cup chili powder
  3. 1 teaspoon garlic powder
  4. 1 teaspoon onion powder
  5. 1/2 teaspoon oregano
  6. 1/2 teaspoon cumin
  7. 1 teaspoon paprika 1 teaspoon salt
  8. 1 tablespoon masa (corn flower)
  9. 1 teaspoon red pepper (cayenne pepper)
  10. 8 ounces tomato sauce
  11. 16 ounces water
DIRECTIONS
  1. Sear 2 pounds coarse ground or diced meat in large skillet or saucepan.
  2. Drain off fat.
  3. Add 1 8-oz. can tomato sauce and 16-oz. water.
  4. Stir in all spices except masa and red pepper. For mild chili leave out the red pepper.
  5. Cover skillet or sauce pan and simmer for 30 minutes. Longer for a spicier flavor.
  6. Stir masa flower into 1/4 cup warm water to make a thick but flow able mixture.
  7. Add masa mixture to chili. Simmer another 15 to 20 minutes.
